Yeast has more influence on how a cider tastes than almost anything except the apples. The same juice split between a champagne strain and a dedicated cider strain produces two noticeably different drinks — one bone dry and clean, the other softer with more of the fruit left in it. What the Main Strains Do
Champagne yeast (Lalvin EC-1118 and equivalents). The workhorse. Extremely tolerant of alcohol, low temperatures and difficult conditions, and it will ferment a juice down to essentially no residual sugar. That reliability is why it gets recommended to beginners.
The cost is character. EC-1118 is a vigorous fermenter that strips out a lot of the delicate apple aroma along the way, and the result is clean, dry and slightly neutral. Excellent as a base for a sparkling cider, or when you plan to back-sweeten. Less good if you want the fruit to speak.
Dedicated cider yeasts (Mangrove Jack’s M02, Fermentis Safcider and similar). Selected to leave more of the apple aroma intact and to produce a rounder mouthfeel. They generally ferment a little less aggressively and finish slightly less dry than a champagne strain. For a first batch where you want it to taste of apples, this is the sensible default.
Wine yeasts (Lalvin 71B, D47 and others). 71B is worth knowing because it metabolises some malic acid, which softens a sharp cider made from cooking or crab apples. D47 gives a fuller body but wants a controlled, cooler ferment.
Ale yeast. Some cidermakers use a clean ale strain for a softer, fruitier, lower-attenuation result. It leaves more sweetness and body but is less alcohol-tolerant.
Wild Fermentation
Apples arrive covered in yeast, and a pressed juice left to itself will usually start fermenting within a few days without anything added.
In its favour: it is free, it is traditional, and at its best it produces complexity that no single cultured strain matches. Much of the character in traditional West Country cider comes from mixed wild populations.
Against it: it is a gamble. The wild population includes plenty of organisms you do not want, and the failure modes are unpleasant — acetification towards vinegar, film yeast on the surface, and mousiness, an off-flavour caused by certain bacteria and Brettanomyces that you only notice as a lingering aftertaste after swallowing.
The middle path most people settle on is to sulphite the juice with Campden tablets, wait about 24 hours for the sulphite to knock back the wild population, and then pitch a cultured yeast. You lose some wild complexity and gain a predictable result. If you want to try a wild ferment, do it with one demijohn alongside a pitched batch rather than committing your whole crop.
Pitching and Nutrition
Rehydrate properly. Most dried wine and cider yeasts want rehydrating in warm water for 15–20 minutes before pitching rather than being sprinkled dry onto cold juice. The packet instructions matter here.
Apple juice is nutrient-poor. This is the single most under-appreciated fact in cider making. Unlike wort, pressed apple juice is low in the nitrogen yeast needs, and nitrogen deficiency is the usual cause of both stuck fermentations and sulphurous, rotten-egg aromas. A yeast nutrient designed for wine or cider, added per the packet, prevents most of it.
Temperature. Cider generally rewards a cooler, slower ferment than beer — somewhere around 15–18°C is a common target. Warm fermentation drives off aroma and can produce harsh flavours; too cold and the ferment stalls.
Pectic enzyme is not yeast, but add it at the same stage. It breaks down pectin that would otherwise leave a permanent haze.
Choosing for the Cider You Want
Dry, sparkling, crisp. Champagne yeast, ferment out fully, prime and bottle condition. Reliable and forgiving.
Fruity, medium, apple-forward. A dedicated cider strain at a cool temperature, with nutrient.
Sharp juice from cooking apples. Lalvin 71B to soften some of the malic acid.
Traditional and complex, and you accept the risk. Wild ferment, one vessel only, and be prepared to pour it away.
Sweet cider. This is the hard one. Yeast will eat any sugar you leave it, so genuine residual sweetness means either stopping the ferment, using a non-fermentable sweetener, or the traditional technique of keeving, which deliberately starves the ferment of nutrient so it stops early. Back-sweetening a fully fermented cider and then bottling it without stabilising is how people make bottle bombs.
