Most cider problems are one of about eight things, and several of them are recoverable if you catch them early. The trick is diagnosing correctly, because the responses are quite different — a stuck ferment wants warmth and nutrient, while an infection wants isolating before it reaches the rest of your batches. Fermentation Problems
It never started. If you sulphited with Campden tablets and pitched yeast too soon, the sulphite killed it. Wait a full 24 hours after sulphiting before pitching. Other causes are yeast that was old or badly stored, sprinkling dry yeast onto cold juice instead of rehydrating it, or juice that is simply too cold to get going.
It stopped early and the cider is still sweet. The dominant cause in cider is nitrogen deficiency. Apple juice is naturally poor in the nutrients yeast needs, far poorer than beer wort, and a ferment that starts vigorously and then dies at a high gravity is the classic sign. Add a proper yeast nutrient, rouse the yeast gently back into suspension, and bring the temperature up into the high teens. If that fails, pitch a fresh, alcohol-tolerant strain such as a champagne yeast, ideally as an actively fermenting starter rather than dry.
It is fermenting far too fast and smells harsh. Too warm. Cider generally wants somewhere around 15–18°C; a ferment running in the mid twenties drives off apple aroma and produces coarse flavours.
Off-Aromas and Infections
Rotten eggs or struck match. Hydrogen sulphide from stressed yeast, again usually nitrogen deficiency. Racking off the lees and allowing some air contact often clears it, and it frequently fades with time. Prevent it next batch with nutrient at pitching.
Vinegar. Acetobacter converting alcohol to acetic acid, which requires oxygen. Once a batch smells clearly of vinegar it is not recoverable as cider. The causes are almost always headspace in a partly-filled vessel, a failed airlock, or leaving cider sitting on the fruit fly season with a loose lid. Keep vessels topped up, keep airlocks filled, and keep fruit flies out — they carry it.
A white or cream film on the surface. Film yeast (sometimes called flor). It needs oxygen and grows on cider left with headspace. If caught early, rack the cider carefully from underneath into a clean, completely full vessel and it often recovers. Left alone it degrades the cider.
A mousy aftertaste. Caused by certain lactic acid bacteria and Brettanomyces. Distinctive because you often cannot smell it in the glass at all — it appears as a lingering, unpleasant, cereal-and-mouse note after swallowing, and some people cannot detect it while others find it overwhelming. It is not recoverable, and it is a sanitation problem: review your cleaning regime before the next batch.
Clarity
It will not clear. Usually pectin haze, especially from cooking apples or juice that was heated. The test is simple: mix a sample of cider with a few times its volume of methylated spirits or similar alcohol — if it forms clots or strings, it is pectin.
The fix is pectic enzyme, which works best added to the juice before fermentation. It can be added afterwards with less effect. Otherwise, time and cold do a great deal: cider left in a cool place for a few months usually drops bright on its own. Finings are an option, but patience is cheaper.
Yeast haze rather than pectin will settle with time and a cold spell, then rack off the lees.
Bottling Faults
Gushing or exploding bottles. Residual sugar refermenting after bottling. This is the one genuinely dangerous fault in cider making, and it comes from two habits: bottling before fermentation has actually finished, and back-sweetening a finished cider and then bottling it without stabilising.
The prevention is a hydrometer. Take a gravity reading on two or three consecutive days — if it is unchanged, fermentation is done. Airlock activity is not a reliable indicator either way.
If you suspect bottles are over-carbonating, move them somewhere cold immediately, put them in a strong sealed container, and vent them carefully behind a barrier.
Genuinely sweet cider requires stopping the ferment, using a non-fermentable sweetener, or the traditional technique of keeving. You cannot simply add sugar to a finished cider and bottle it.

- Sanitise everything, and give sulphited juice a full 24 hours before pitching.
- Add yeast nutrient. Apple juice does not have enough on its own, and this single step prevents both stuck ferments and sulphur.
